September is like jumping into a cold lake – shocking and you have to keep moving while your body tries to adjust.  At least that’s how I feel…  After the loose schedule of summer, September is always hard for me.  One thing that seems to virtually disappear is cooking at home.  It’s been hard for me to get back in that routine even though I love to cook!

I thought I’d share a favorite quick recipe that takes about 15 mins to make!  This is my adaptation of a recipe out of my Apples for Jam cookbook.

Vermicelli Soup with Tomatoes and Basil

Chicken broth

Can of tomatoes and/or tomato paste

Vermicelli or Angel Hair pasta

Fresh basil

 

Bring broth and tomatoes to boil.  Add about this much pasta (or a little less) –

Cook until pasta is tender and add fresh basil either torn or sliced.

With fresh yummy bread or grilled cheese, it’s the quickest meal ever!  My girls love it!
